Nena’s Breakfast Casserole

Hello and Happy Thursday!

On this week’s edition of “Nena tips and recipes” I am posting her delicious recipe for breakfast casserole. Both of my Grandma’s actually made a version of this casserole and it was always one of my favorite breakfasts for when the whole family would gather together as this is an easy recipe that feeds quite a few. Also it tastes best when made ahead of time and refrigerated overnight. That way you can simply get up and pop it in the oven with no work in the morning!

Nena’s Breakfast Casserole-


8 slices bread broken/chopped into approximately 1×1” cubes

2 cups grated cheddar cheese

2 lbs regular Italian sausage browned and drained

4 eggs beaten

3 cups milk

1 tsp mustard

1 can cream of mushroom soup

Salt and pepper to taste

Butter a 9”x13” baking pan and place bread cubes into the bottom, then layer grated cheese over that. Sprinkle your already cooked and drained sausage on top of the cheese.

Next blend 2.5 cups of milk with the eggs and mustard and pour this over the ingredients already in your pan. Cover this and refrigerate for at least 2 hours and up to overnight. When you are ready to cook the casserole simply uncover it, mix up the final ½ cup of milk with the cream of mushroom soup and pour that all over the top. Bake uncovered at 300 degrees for approximately 1.5 hours or until the top is firm. Enjoy!

*Please feel free to adjust this recipe as you see fit. If you like spicier try hot Italian sausage instead of regular. If you have some fresh herbs around parsley or chives work really well in this dish. If you are an onion/pepper fan those work great in this as well. Nena’s tip of the week:

Dry clean your dog in between baths with a combination of baking soda and cornstarch rubbed into its fur. Brush out and smell the difference!
